Gluten (Wheat)

Wheat gluten, a fine light tan-coloured powder obtained by drying freshly prepared wet gluten separated from wheat flour — not organic.

Generally used in bread recipes to boost the gluten content of flours such as rye, helping them hold yeast gases and rise. Can also be used as a meat substitute.
